Sounds like your school sticking to stock iLife which where your issue is.
iMovie is for basic editing, deeper options are found in other commercial tools.
Video Editing: Premier Pro, After Effects, Resolume Arena, Autodesk Smoke (Free for students), Final Cut Pro 6 or 10
Sound: Logic Pro, Reason, Adobe Audition, MaxMSP5 and Audacity
Imaging: Photoshop, Aperture, Illustrator
Can't forget all the non Adobe editing suites as well that are popping up more recently.
Reason and Audacity can both be used quite well as free products if you combine it with audio routing tools.
Look around for software and plenty of deep tools to use.
I agree on the fact the mighty mouse is rather terrible and speakers are decent. I use my own laptop mouse or bring my Deathadder and have studio headphones for audio.
