If you are using the most up to date programs and are not going to be gaming then your build is not the best match. You would want the dual socket boards with Xeons. Get a FirePro card or two and use them as they offer way more performance than anything Nvidia has in OpenCl applications. Final rendering is almost entirely a CPU task not GPU hence why most of those programs to use network rendering nodes. Software versions are going to play a big role here as well.
Ok, two things: why Xeon and which one in case?
As for the FirePro I'm not a fan of ATI video cards. I'm open to all suggestions about MB, and other stuff, but I won't change my mind about the video card
