how much gpu ram do i need

I have found that i'm maxing out my 2GB GDDR5 ram with my GTX 680 on my 1080p display running Skyrim with mods. I'm looking at upgrading to a GTX780 with 3 gig of ram or should i wait until the 780 has a 6GB variant?, I plan on modding upcoming games like GTA4 when it's inevitably released on pc.

even if you had 4GB of VRAM, your FPS in skyrim with mods wouldn't change

why is that? i thought when the game calls for more vram that's not there the game takes a significant hit to fps

According to EVGA, there won't be a 6GB version of the 780 available for the foreseeable future.

EVGA's not a company adverse to making double-VRAM cards (e.g. 4GB versions of the 680 and 770), so most likely that's due to NVIDIA wanting to protect the product placement of the Titan.

3GB will be more than enough. When games need more than 3GB your GPU will be the limiting factor, not the VRAM.

makes sense. should i pony up a get a titan to get the extra 3gig of ram or should the 3gb with the 780 be good enough for future game modding?

If you don't envision going beyond 1080p, the GTX 780 3GB should be more than sufficient in terms of both processing power and VRAM.

Essentially in real world performance as far as gaming in concerned the Titan is £300 more expensive and you gain 3GB VRAM and 5fps.

780 will be fine for what you want & has plenty of headroom for future titles.

+This. 6GB of Vram would be overkill I think for 1080p, at least for now. Plus, you're better off getting the EVGA ACX 780. The benchmarks that I saw matched up with GTX Titan. Crazy considering the fact that the titan is $1,000 card.
