GTX 680 In nVidia Surround Freezes and Stutters

So I have a GTX 680 2GB (I know, I should of got a 4GB if I wanted 3 monitors) in nVidia surround with 3x 1080p monitors. When playing BF3 I get a solid 60+ FPS on Medium/High settings, and all of a sudden it skips,freezes,and stutters for a few seconds, and then it's back to normal for a few minutes. It repeats this process almost every 10 minutes. It's annoying, but playable. I haven't overclocked yet, and I'm running the latest drivers through nVidia Experience.

I should also add when I play Minecraft it's basically unplayable. The game freezes for about 30 seconds, and then is playable for a few, and then back to freezing.

This only happens when playing on 3 monitors.

Any suggestions one what I should do?

Download EVGA Precision and check the VRAM usage when in-game via the OSD.

So what I've found out is that in minecraft, I'm using just under 1000MBs of Memory. I notice when I get these freezes, my GPU usage drops to 0%. How do I fix this?
