Which OS to use?

I have recently installed Windows 8 and I didn't really like it. I am thinking of a dual boot system, one is Ubuntu and one is a Windows. I will use Ubuntu as my main OS. My main uses are from least important to most important:
Surfing,Movies, Music, Compression work (ZPAQ, TX264), Video editing (Premiere Pro CS6) and Gaming.

It will be fairly a good computer, with an i7 3930k with 16GB RAM. Now, firstly, for Compression work, will WINE provide maximum performance compared to native Windows? I'm a newbie, and I've tried searching, but no use. TX264 uses lots of other programs too, and dll's and stuff. Will it allow the software to do everything it needs to do? Same applies for Premiere Pro. And about Gaming, from what I've searched, NVIDIA is releasing nearly same performance drivers for Linux compared to Windows. But it's closed source, which means updates can come a bit late. Nevertheless, if the driver side is good, what about WINE? I've heard for Crysis 1 for example, the performance is downright garbage. Please help me here! Thanks mates!

WINE's performance is comparable with Windows (some occasions it out performs Windows, some occasions Windows outperforms Linux+WINE).

However I wouldn't bank on WINE for production work. WINE works brilliantly considering what it is, but it's also very buggy at times and extremely fiddly to get some applications to run reliably. So if you're looking to run Windows software specifically and/or game, then you're better off with Windows 7 over Linux.

That said, Steam has been ported to Linux and there are a few games on there. And there are native Linux video editors. But the selection of games for Linux isn't as good as Windows and Premierer will trounce even the best Linux video editors.
