You're talking about GAME demos, which are about the GAME - not about the hardware powering them. Usually when the central big screen is being used to show a gameplay demo, yes it's quite common for the demonstrator to use a powerful PC because they want to make their game look as good as possible at the highest settings. They did it with Hitman, Tomb Raider, Dirt, etc,.
But if you think there is anything "relatively common" about having a ROW of booths labeled "XBox One" solely to provide a taste of the XBox One's experience being powered by GTX680 + X79 rigs and having absolutely nothing to do with the XBox One at all...something is wrong with you.
