The cage is removable, but if you wanted to say, shift it over an inch, you'd have to drill holes to attach it to the new location. I really think you'd be fine with one high capacity (3-4 TB), 7200 RPM hard disk. Getting a lot of quick RAM would really be more beneficial for snappy editing.
Of course, you can always put a mATX board in a mid tower case with more drive cages. The 350D is really specialized for custom water cooling, but doing so makes it unfriendly with storage. That's the trade-off. =/
