3-Way GTX 780 SLI for 1440P/1600P surround isn't a good idea. It's not a good idea for surround at any resolution unless you're specifically running a 1080P 120hz setup without AA and just going for raw framerates because your available performance far outweighs your VRAM. SLI isn't so much of a big deal but the third card becomes a bit of a paper weight at those resolutions for the price for pay for it. You can't increase your VRAM but you can add another GPU for more processing power.
COH2 for example. On my 1200P surround setup it uses 3200MB of VRAM maxed without AA and plays with a single GTX Titan at 60FPS. That's just going to be a bad experience for him if he tries to play that game, especially considering the few million extra pixels he's running. Why would you purposefully spend more money for more performance you can't use and put yourself in a controversial position if you don't have to?
I'm interested to see the differences and how much of the VRAM is actually used or just cached (maybe a few hundred MB difference?) but I'm not optimistic about it. I've been there before seen the same VRAM usage in BF3 on a 2000MB (GTX 690) and 4000MB (GTX 680 SLI) setup with the same settings and hit the hard limit with the GTX 690 and it isn't pretty. I don't want anyone to have to be in that situation if they don't have to but if people don't listen you can't help them can you.
If the GTX 780's 3000MB of VRAM was enough for any game in surround, I would be running three of them.
