Help/Advice on Upgrade

Hello All,
I am seriously considering upgrading to Ivy Bridge-E when it is released. I am a poor grad student but I have money saved up for another build. I was thinking about waiting until Haswell-E, but I am expecting it to be more expensive due to DDR4 memory. My hope is that the next build/upgrade will last me for the next 4 or 5 years of grad school. I only lightly game with pretty old titles (ex. Counter-Strike 1.6 and Warcraft 3) so I have no urge to upgrade to an expensive graphics card. Mostly this system will be used to run simulations and Engineering programs like Matlab and Mathematica. Some of these simulations work well with MOAR cores but others do not, so it seems like a 6 core i7 is a good balance. I also decided to look into the option of a minimum upgrade to my current system. Both are below.

Things I am not too sure of:
1-Really have no idea what to look for when it comes to memory. Also I keep seeing reviews that some memory sticks are incompatible with the CPU cooler due to large heat spreaders.
2-Also not too sure about the motherboard.

I have a Microcenter close by, which is where I will buy most of the parts.

Option 1-New build:
CPU: i7 4930k - $500
CPU Cooler: Noctura - $80
Motherboard: Gigabyte GA0X79S_UP5-WIFI - $300
Memory: 16GB---- ~ $150
Storage: Samsung 840 Pro Series 128GB - $120
Storage (2): 2TB Hard drive - Salvaged from current system
Video Card: NVIDIA GT 620
Case: Cooler Master Haf XB/Corsair 540D - ~$100
Power Supply: Corsair CX 430W 80 PLUS Bronze

Total: ~$1300

Option 2-Upgraded build: (Bold is upgraded)
CPU: i5 3570k
CPU Cooler: Noctura - $80
Motherboard: Intel DH77EB
Memory: 8GB---- ~ $60
Storage: Samsung 840 Pro Series 128GB - $120
Storage (2): 2TB Hard drive - Salvaged from current system
Video Card: NVIDIA GT 620
Case: Cooler Master Haf XB/Corsair 540D - ~$100
Power Supply:300W

Total: ~$360

Current System:

Any advice or critiques is greatly appreciated. Thanks!

If you want to spend all that money on a new PC you sould not buy a Corsair CX its not very good and does not belong in a system like option 1

Thanks for the heads up. The Corsair CX seemed like a popular low-watt psu. I will look into other PSUs.

Thanks! That link was very helpful and extensive.

After thinking about it some more, I am thinking about just upgrading my current system and see what the market looks like in a couple of years. Is transplanting a system into another case pretty straight forward? It seems like it is, but I have never done it before. Also what should I look for in regards to memory? For example, is there much practical difference between PCS 10666/12800/14900? Other than that, look for low cas and low voltage memory? I live in USA.

RAM speeds above 1600 Mhz is not much faster so you would be paying more and getting not much more speed

1600 MHz = PC12800
