But now, on the Z87 running on SATA 3 there is a distinct difference given the same hard drive setup (my single raptor vs two RAID 0 SSDs).

For a server this might be a noticeable difference for you, since the high power raptor drives would eat tons of power compared to the normal slower drives that you would put in a server to save on costs like that. And of course an SSD would run lower on the power than even that. But speed and reliability? I don't know. Speed is likely getting gimped hard by the slower SATA port and the crappy nForce RAID controller (which is like the worst RAID controller ever made), but even given that it would be likely better than a comparable low power platter drive. Reliability is debatable, depending on the SSDs you are using and what you are using the server for specifically. Long term data with little access, sure, might be better. But if it gets heavy use and new data is getting written on and removed all the time you are likely KILLING your SSDs... just saying.
The Raptor is a server HDD for consumers, not the other way around. Server already use 10K and 15K HDDs for years before the Raptor appeared. Servers use SSDs for RANDOM performance. Sequential performance can be gained easily from RAID.

Enterprise SSDs are rated for much higher P/E and higher over-provisioning to mitigate wear.

No, it's just the controller.
