I never pay attention to the max rated temp.  Intel says its 66.8C for my CPU, and I was folding it ~80C last night.   (Not saying I recommend doing that, don't get me wrong, just saying I do it).

The 66C that is written in Intel's Ivy Bridge thermal docs is not talking about core temperatures, but is measured on the motherboard, under the CPU mount.
