Xeon 3060 system build

I'm an experienced noobie overclocker seeking to building ( yet another ) stable gaming system. I've read a good deal of the posts here and I've come to the conclusion that this will be my final system:-
Motherboard= Asus Striker extreme ( on order del Jan )
Memory= 2GB cellshock PC8000 ( still boxed )
Hard drive= 2 x scsi 320 15k 36GB disks on LSI adapter
I have plethora of 250GB storage disks
Graphics= 2 x7800GTX looking to upgrade Jan to 8800GTX or R600 when it arrives ( got stung on ATI 800 so I'll wait )
CPU=Xeon 3060
Case= A Plus Twin Engine with 2 x 250mm Fans or may leave watercooling kit in boring AKasa Eclipse-62
CPU cooling= 1/2" dia water cooled with swiftech apogee block, Thermochill PA120 rad, coolplex 250 res, AquaXtreme 50Z waterpump
monitor= Dell 3007WFP
PSU Seasonic S12 600W (may have to upgrade but i love seasonic )
Soundcard= Creative X-fi Fatal1Ty
Basically I'd like to know if running FSB @ 500Mhz and dropping multi to 6 or 7 will result in the best speed for running games and utilize maximum bandwidth and if this system could be better optimized.

If you've got the money I would advise looking at the Xeon 51 series - their meant to be the best of the series

Other than that, the only other thing is that I would recommend either trying to fit another PSU into the case or buying something more towards the 1000W mark

funilly enough I just sold a pair of Xeon 5130's the FB dimms are horribly expensive and so was the supermicro non overclockable board to put them in.

You don't want the Xeon 5130's because of the limited motherboard options. They motherboards are expensive, don't support SLI, and don't overclock.
