Would the AX750 work with my components listed in my signature? I'm trying to make sure everything will work since my Seasonic died and fried the motherboard with it.

Well it's quite overkill for your system. Your system is about 350w when in load, but yes, the AX750 will work.

I'm scared of using it on a new motherboard since it possibly fried my old one and the 8 pin seems burned out.
