If it were me, I would not choose LGA 2011. Instead, I would go with the latest Haswell processors. Not only are they 'more suited' to your usage, they also have a much higher price/performance ratio than the LGA 2011 processors.
Here's a performance benchmark compared to the 3930k:
As you can see, the performance between the two is very close; the results will vary depending on the tests performed. Another thing to not is the price between the two. The 4770k is around $340. The 3930k is around $570.
As for the PSU, I would agree with two cables... Your current PSU isn't exactly designed for performance users. Instead, it's more of a 'stick it in there and forget about it' PSU, Based on personal experience, I would recommend going with a Corsair or NZXT PSU. I would recommend getting at least a 650w PSU. Don't get me wrong, your PSU will work in the system, its just that it exactly fit your needs, especially with that monster GFX card that you're putting in there.
Here's a reputable PSU from Corsair:
As for the SSD, any brand is good as long as its from a reputable manufactrer; it's pretty hard to go wrong with a SSD.
I would recommend going with a Samsung SSD; they're highly rated and they are extremely fast and reliable.
To run 1866 RAM, you will need RAM that actually goes up to 1866 MHZ. the kit that your listed only goes up to 1600MHZ.
Here's the same kit just clocked at 1866:
This machine will more that handle Adobe CS6 apps. In fact, unless you'll be gaming, there's no point in that GFX card; The 7870 is designed for gamers.
