I'm not sure what you mean by "a single disk". In fact I'm completely unclear on what exactly your issue is with Ghost.
If you have the corporate version of Ghost, more specifically Ghost32.exe, you can create a WinPE that utilizes as a live CD or live USB boot and create an image on a hard drive (I just did this the other night so it's fresh in my mind). Ghost32.exe has the advantage of saving to a network location assuming the underlying OS has the NIC drivers of course.
If you have "Ghost.exe" that runs in DOS you can use a bootable DOS CD or thumb drive. That one has the advantage of burning to CDs and DVDs then making said CD/DVD bootable.
It's not a byte-to-byte image but Windows Vista+ has the WIM format of images that can also be used. I haven't played enough with that to provide more information.
Or you could use clonezilla. Personally I don't find it as easy as Ghost/ghost32 but can't complain if it's free. And by easy I just mean entirely too many clicks between bootup and getting to the imaging. That could probably be fixed via custom clonezilla ISO
