so is there any performance difference between having 1 stick of 4 gb ram or 2 sticks of 2 gb ?

If you have a motherboard that will run in dual channel then yes 2 sticks of memory is faster/better to have.

Yes, you lose dual channel which performs significantly better than single channel. Also overclocking will be affected as you will have to readjust settings to compensate.
