Im trying to do that battlefield 3 multi monitor eyeinfinity...

IMHO the only advantage the 780 has over the Titan is the price but if you look around you find used Titans at a similar price of a 780 classy, the used ones have the advantage of already knowing the ASIC score so you´ll have an idea of its overclocking ability, the same can be said of the used 780´s! but titans will always have the upper hand (you´ll need an extra 170/200mhz to beat a titan) so not many 780´s will beat most titans IMO!
So either way you save money! i bought my Titans second hand (close to 780 classy price) and i do triple surround 120hz VG278HE lightboost enabled 2D/3D
take a look here: http://www.overclock.net/t/1339384/zero-motion-blur-lcd-nvidia-lightboost-hack-looks-like-crt-looks-like-480hz/1400_20
So i went titans instead of 780 because similar price, better cards, go for Titans!
Simple really...

my 2 cents

Cheers

Ed

OP if you are only going to have two cards, then go for the GTX 780s. If you are going to use 3 cards and very high resolutions then the Titans are an option. Two GTX 780s or two Titans don't have enough GPU grunt to use more than 3gb in most situations.
