600W is plenty.

To answer your question regarding vram, you might want to consider a 7950, which has 3gb of vram, as especially a modded skyrim can use it up quite effectively.

If you budget 170w for each 760 then 150 for cpu, i guess it's not that bad @ 490w with a bit left for other components, but i'd look up fan speed curve for psu's, mine for example which was a random pick out years ago that is kinda-ok, runs fan like 2.5x as loud as 80% load as at 45% and it's important for some

Edit: Don't assume tdp = power usage though. Don't. 680 and 770 for example as i said use the same GPU, are almost identical in power consumption, one has a 180w tdp and the other a 230w tdp. Both use like 190w with gpu boost and frequency pushed a bit on stock or a tiny bit above stock volts

If it's a good Antec, Silverstone, Corsair, etc. PSU, that's absolutely enough. But if it's a mediocre rosewill(IIRC the capstone series is exceptional), or worse, then no, might not cut it.

I run dual 7950s on my AX650. I thought I had PSU issues, but it turned out to be ASmedia SATA3 drivers, who knew...
