Haswell seems to be running pretty warm just like Ivy Bridge.. So yeah, an aftermarket cooler is a good option and allows overclocking in the future if you need more power..

Will I be okay with the heat using just the stock fans of the case? That was my main concern for choosing a single GPU over SLI. I rather not use a Gigabyte mobo, I had some serious fan control issues with them before. I might go ASRock though.
I'd like to keep the K option in case I would like to overlock at some point in the future. I'll then invest in an aftermarket cooler.

if your keeping the build with the K you'd only require a aftermarket cooler really only if your overclocking right away, otherwise you could hold off, however getting a aftermarket cooler now will help with the longevity of your product by a probably a minuet amount, and you'd probably have another computer by the time you'd able to see the results.
Definitely Single over SLI, look at it this way, if you get say two 760's ti's now and sli it, you'd have to replace both for say one or two other cards. for the price of two cards you could probably get the higher end card while saving money for the next upgrade.
The ram isn't over kill but I woulda chose something else more non-vanity, it probably woulda shaved a few bucks, IMO I thought the intel extremes were a bit over priced for some run of the mill ram, its just the intel extreme branding that woo'd me but that buzz passed me a few weeks later lol, and I went with a 16gb kit for about the same price on sale.
