I just wanted some help in how to OC it, temps are great so far.

Should I use OC Guru II (gigabytes version plus version of my card) or Msi Afterburner? Or EVGA Precision?

Also how should I OC it? like is there a set number area to start out? set it to +12 +100 and just see what happens and go up or down from there?

You can use either Afterburner or precision. They work the same. Its a matter of taste. You first start up by setting your power target to the max. Then set you fan as high as you can for daily use. Always start ocing the core first with small steps and stress test the card with heaven all maxed out for a couple of runs. For me is harder to pass than 3d mark. You proceed this way till you see instability like nvidia driver crash, system freeze and the like. The you set core speed to latest stable oc and you start to oc the ram the same way till you get artifacts on the screen. Then you set it to the latest stable value and you are good to go. Now test your new overclocks with your favourite games. Usualy a driver crash is gpu related while artifacts are mem related. You can also check here for a guide with fotos GTX780 OC
