Since there is 2 sets it could be one of two things: Passthrough/Amplified passthrough that lets you daisy chain screens from the same input, or a second input.

Jamey is right with hooking it up with a fuse. That will prevent things for burning up too bad if you hook it up wrong.

I've destroyed the cables kind of so once I get it powered on, I'll probably get rid of the other wires and clean it up with some heatshrink.

You can some solder on RCA plugs at Radio Shack. You could also just cut a RCA cable and splice it to make sure it works.

Do I have to worry about the inner wires or just match them up twisting all the wires together?

Rca is your only option. It's how they are manufactured. It is a very low quality display. Still a neat idea though!

RCA connectors are used for component video. Just connect inner to inner, and outer to outer. Note you might get some video distortion if you're using the slicing method.

Should have specified what I meant. Component is possible, but you won't get any better quality because it is still on video signal and left/right audio

Remove a inch of the insulation and twist the wires together, maybe wrap them in tape. There are better, or permanent solutions, but few twists is enough to see if it will work.

I would recommend testing it with something cheap like a VCR or DVD player, so you don't accidentally kill your PSP. If you accidentaly send 12V back to your PSP it's a goner.
