A GTX 770 will run about equal to your 580's with adding the extra VRAM. Ideally, you'll want to go for at least a GTX780 for it to be a definitive upgrade, and it's looking like 3gb of RAM is the ideal amount of VRAM heading forward.
Crossfire 7950's would be better bang for the buck if you're prepared to go that route - actually, probably the best value option these days. Could get a pair of 7950's for around $400 or so with the sales as the new AMD cards fast aproach. I'd say you'll get near $250 for your 580's. Not a lot out of pocket for a butt-load more performance.
As for me, I'll be running my sig-rig: overclocked 7850 @ 1080p. I've not tried the beta yet, but from what I've read I'll be shooting for a combination of high/ultra without AA. Might try and squeeze some more clocks out of my CPU and GPU - take the side panel off my case and blast the guts with a fan - but I'm fairly comfortable with lowering the settings here and there, along with playing at 40-50fps average, as I'm not competitive in my gaming.Edited by willibj - 10/16/13 at 3:40am
