Yes you can.

I'm typing to you right now on a Single GTX760 over 5760x1080 setup.

It will dominate still for all your video/software programs, the only issue i've run into is playing Surround games over 5760 is average.. but as you said - you're not looking for a surround setup for gaming.

I would strongly suggest investing in the latest BETA of DisplayFusionPro as well, it will make your Surround experience 10x better.. Allowing you to flick between 'Surround' and simple 'Split Screen' with a click of a button.

Hi Chevz, thanks..

Currently I have 2 monitors using DisplayPro Fusion V3. Planning to buy a 3rd monitor.

How and which connections do you use?

Will it automatically detect when I plug in all 3 monitors?

The reason I say the latest BETA is because there's no other software right now that can enable you to switch between surround profiles as easy, it's a nightmare otherwise. But yeah just a heads up.

I use two DVI and one HDMI, everything auto detected but if it doesn't just go into your nVidia Control Panel and enable it and you're off and away.

I would comfortably play on 30fps on 5760 resolution with all high settings, but the smallest bit of FPS lag irritates me - so I've ordered a second GTX760 today. In terms of 1920 resolution gaming, I havn't found anything that can't be run at max settings yet. In saying that, I only play BF3, CSS, LoL, GW2 and CoH2.

Honestly if you're anticipating BF4 like I am and want to play it in Surround (oh my god BF3 in surround is amazing to say the least, talk about being immersed in the game play) I would go straight to the 770 at least, or go straight for the SLi 760 setup like I'm going for.. All the benchmarks (you can see my other thread in this forum) show that SLi 760's will be superior to a GTX Titan in most games.
