I'd put Ubuntu/Mint or Debian on it (maybe even Fedora), partition a space for /home specifically and then if anything does go wrong you have a simple walk through on an install with those choices. Fedora/Ubuntu being the easiest (mint included in Ubuntu), so then you just have to have them partition (which is guided easily) the root directory and setting /home manually. Everything is saved on a "wipe" and all those distributions have a nice package manager. A screwup, if elsewhere, should only take 30min or so to fix. Heck, you could even write (I know, physical pen!?) or print instructions that are impossible to get wrong. Heck, you could pring out pictures!? Oh noes! Honestly, if they don't update while traveling their chances of failure is almost nothing. Debian and Fedora on official repos are also close to nothing, with debian practically being nothing. You use Stable on Debian, you get stable updates guarenteed. So I'd do that type of route.
