The only test I've seen that was done by a reputable source (its ironic I can't remember the source) gave the result of "No, you do not gain any performance boost from an SSD. You can even encounter games loading slower."
I also was just re-reading up on it to see if the standing has changed. I read about one person claiming it helped and two claiming it was a waste of money and they just put their old drives back in.
For every time I've seen someone say "This process is faster with an SSD" There's a lot more people saying "No. It doesn't".
Keep in mind, the PS3 only supports SATA1 anyway...
