Will an upgrade help me out any? (2 GTX 580 -> GTX 780?)

I recently got 3 new AOC IPS monitors and im trying to run surround, but ive came to realize that my 1.5GB GTX 580's just don't handle that 5760x1080 very well. Ive had them for like 2 years or something now, and i think its time for change. I do not want to go down in overall performance just to get cards with more VRAM, but im not sure how current stuff pairs up to my setup. Would like 1 GTX 780 do the job and beat my current setup for surround and single monitor games? Or would like 2 GTX 770's be better? I would plan to watercool what ever setup i get. Or heck is there like a new card coming soon out i should wait for? I have received $3600 refund from school this semester and would like to blow it! But in all reality i would like to stay around $1000 or so.

The 780 beats both your 580 any-day. but for 3 monitors the 770s 4gb ed will do better.

However in the middle of this month the new AMD cards will hit the markets and are looking very good. the best option will be for you to get an R9 290X which is rumoured to be better than titan and with 4gb of Vram to use(also there will be 6gb versions of this yet unreleased card.)

Thats what i was thinking, 2 GTX 770 4GB's.
