That's kinda what I do with my setup, I have the 2 cards running at 1200/1400 which is kinda the middle ground for both cards on the core. I leave the memory a bit low for both because I just don't see that much of a boost except for heat which I don't like. As far as mining the best thing would be to test what the best clocks are because a lot of times lower clocks will net more hashrate. I would set up 1 profile for gaming and 1 for mining once you find the best clocks for both and the you can switch back and forth as needed.
Example - for gaming you might rum them at 1125/1650, usually higher is better
for mining you might be better at 1000/1500, sometimes lower is better
Also I have found that the top card get's hotter normally, so I would put the coolest card in the top slot.
