So I have a sandy bridge i5-2500k paired with a gigabyte z68x-ud3h-b3 motherboard. The bios on the motherboard can be updated so that it can be compatible with ivy bridge cpu's and also enabling pci-e 3.0. I'm currently using a radeon 6970 but planning on upgrading possibly to a r9 290x or a gtx 780, which would implement pci-e 3.0. Would my cpu/motherboard be bottlenecking my new gpu? Should I get an ivy bridge cpu so that I can use pci 3.0? I use my comp for gaming mostly and am getting the new gpu in preparation for it.
pci-E 2.0 to 3.0 doesn't give much gain unless you are running 3 or 4 cards in CrossfireX or SLI. Probably 1% gain to be honest if you made the switch to a pci-E 3.0 capable cpu running a single card.
Your 2500k and it's pci-E 2.0 will not hold you back with a R9 290x or GTX 780.
We've got the same CPU and a similar board, and even if you don't OC that 2500k, it still shouldn't hold any high end card back.
Btw, if you've already got a Sandy Bridge i5, your only upgrade option would be to Ivy Bridge unless you change the motherboard, even then, if it's just for gaming you shouldnt need to at all.

2 years and still more to come. You should be able to pair up a nice gpu with it and not expect any bottlenecks
