The whole point? This doesn't have to do with the GPU's stuttering, but more the fact that GPU's are usually never synced up well with monitors unless you have a huge overabundance of graphics horsepower and can maintain a solid 60 or 120 or 144fps or what have you.
If a GPU is running with vsync on and performance goes below 60fps then that (or those) frames are effectively displayed at 30hz causeing a stutter.
If the GPU is running with vsync off then frames are pushed out as fast as possible and the display starts loading frames at weird times thus resulting in things such as half of one frame at the top of the LCD panel and half of the other frame at the bottom. But this doesn't suffer from stuttering, it just looks like garbage.
Gsync makes it so that the monitor displays frames as they come in, and not at a pre-determined rate, thus effectively giving you best of both worlds.
