If you mean professional cards like Firepro/Quadro, then it's more about drivers , underclocking for lower power and thermals (GK104 quadro k5000 uses 122W clocked ~700Mhz , K6000 GK110 is 225W at ~900Mhz), and better components (at least on Firepro).
Nvidia Tesla is the compute GPU.
AMD's strategy is to have compute and graphics on the same GPU, Nvidia's strategy is division of graphics and compute (see "Maximus") , with artificial software lockdowns. There's exceptions to this: Quadro K5000/K6000 are able to be used for compute in ANSYS and some other engineering programs plus rendering. For iray rendering the number of CUDA cores matters more than drivers , that's where GTX TITAN/GTX780 shine.
