Should i stick with the stock cooler that comes with the i7 3770 or get an aftermarket cooler?

I won't be overclocking obviously. I won't be getting the k version I'll be getting the i7 3770, but i will do things like playing games like Grand Theft Auto 4 and maybe do editing. Will turning Hyper Threading on be too hot for the stock cooler?

You can stick with the stock cooler if you don't overclock and HT should be fine on! But definitely recommend you to grab a cheap air cooler as they perform alot better than the stock heatsink.

You can still OC a non k chip to some degree by raising the FSB. That will raise the speed of everything on the board, cpu memory, etc. The stock heatsink works fine. It's just neither particularly quiet nor powerful. If you need one or the other, an aftermarket heat sink can help. but if you don't there's no reason to buy one.
