Not everyone water cools (actually less than 1% of the people do) so yes, a better cooler IS worth it to other people. Also, the GTX 780Ti has a bit of new technology in it to make overclocking a bit EASIER, and this will appeal for the novice.
And considering that there are NO other air coolers that you can buy with the card right now for the R9 290X, until there are, you really can't compare what "might be". Who knows, maybe when there is competition from AMD for a GOOD air cooler, nVidia will be forced to lower their price, but until AMD puts up an air cooler that is worth a damn, the price is what the price is.
Is the $150 price tag worth it to you as a "hard core water cooler"? Doubtful
