This. Where I work we have 2 virtual hosts (big servers with multiple CPUs and large amounts of RAM) these contain various virtual servers, file servers, mail server, web server, domain controller, Microsoft licensing server, remote gateway server, WSUS etc etc.

If you had the redundancy set up correctly, yes. VMWare have something called VMotion, this can move a virtual server from one virtual host to another without ever shutting down that virtual server.
