Because performance, thats why. $800 of 290's will wipe the floor clean compared to a 780ti, and nobody should deny that. Oh, so you say the single card will be smoother? Not gonna matter when you gaming miserably at 40fps. This isnt just about the 290 either, the same goes for 780's. People shouldn't be confined to the perfomance of single cards, that performance wall comes much too soon in the environment most people game in today. Of course, this doesn't really apply to people stuck on 1080p because high end single gpu solutions will work just fine in most cases.

And for the record it is a much smoother experience. I've had, let me think, at least 15 different sets of cards over the last few years, both crossfire and SLI. Most recently a pair of 770's and a pair of 7970's. As such, I can speak definitely regarding gameplay experiences. Sure you get a lot higher frame rates with 2 cards over one, no dispute there but for gameplay experience a single card is always smoother (albeit not as high a frame rate).
Given your somewhat rabid attitude, I can assume that no amount of reasonable discourse will convince you otherwise.
What FPS do you define as not "confined"? I am quite happy with anything north of 100 FPS consistent (in other words minimum frame rate). Pretty much a requirement on a 144 hz monitor.
I was averaging much higher with both the 770's in SLI and the 7970's in Crossfire. However, the experience between the two (single card vs. dual) is very different.
I've been on the wait for a single gpu card that is fast enough to not require doubling it up.
You can sell the benefits of dual cards all you want; I've invested many thousands of dollars in gpu's over the years (going back to my first set of SLI cards quite a few years back).
Plus who knows I may get bored and pick up a second 780Ti. I don't need it but it might be fun.
