I'm not totally sure on the whole issue with G-Sync, but it is actually a consortium of several companies ... not just nVidia. I would think that all those monitor companies would want AMD to sign on (most likely they will have to license the technology for their cards, but maybe not) so they could sell even more new monitors to people who own AMD cards. nVidia will make money, since they own the card that goes into each monitor, so even if nVidia allows AMD to use G-Sync in their future video cards, they still make money.
That is the big financial difference between G-Sync and Mantle, nVidia will make money on G-Sync, AMD won't with Mantle.
Also, with a consortium, one company doesn't call ALL the shots. Sure, there is usually one or two major players, but since we are talking about a hardware platform here, nVidia can't be a total tyrant and do what ever they want. With Mantle, since it's AMD's baby, they can do what ever they want.
