The samsung I posted is better, the one you linked only has 2mb of cache, I would recommend at least 8mb

I would get:

Abit QuadGT P965 Motherboard, Intel Core 2 Duo E4300, 2GB of G. Skill DDR2-800 HZ Ram, OCZ GameXStream 700W, and ATi X1950GT Graphics Card.

The Abit QuadGT is the best overclocking and speed per clock P965 out to date, check around the forum and you'll see what I'm saying. Also, the E4300 has a 9 Multipler, which, when running at 400FSB (1:1 Ratio with Ram) you ca n get 3.6GHz, if your cooling is powerful enough. As for the Ram, the G. Skill DDR2-800 (PC2-6400) 4-4-4-12 HZ Ram is amazing. The Power Supply I upgraded to the 700W Version because you want more headroom if you plan on getting an 8800GTX or X2800XTX. Oh, and, people said you could get an X1950GT for the same price, so, that's always nice.

Get whichever is cheaper, they are both practically the same at oced speeds

Okay well here are my updated proposed specs:
Case: Lian Li PC-7 £57

CPU: E6300 £120

Motherboard: Asus P5B Deluxe£123

PSU: OCZ GameXStream 600w £76

RAM: 2Gb Team Xtreem PC2-6400 £202

GPU: HIS ATI Radeon X1950 Pro ICEQ 3 TURBO SILENT£129

Cooler: Tuniq Tower 120 £27

My question is - Because I'm not thinking of upgrading to Vista or DX10 anytime soon, will I need 2GB woth of RAM? I want to play the latest games and I want to overclock. Is there any point in getting 1GB now and getting another stick later?

You will need 2gb of ram really, the latest games require it. You will be really glad you went with 2 over 1.

I will do some price checking for you now.

Overclock will stay the same. Its just that some games are really laggy without 2gb of ram, BF2 and BF2142 especially. Plus everything loads slower.
