Well I'd want more than just an audio/visual update. Many of the classics need a gameplay overhaul as well. With that being said, the answer for me is clear: Planescape: Torment
. It features the best writing and story in video game history. Modernize it in 3D, with the option to play in third person like the Neverwinter Nights games and Dragon Age: Origins. Get some quality voice actors in to make that beautiful writing come to life, update the mechanics so that they function more like Neverwinter Nights 2, except with the fluidity and the quickbar of DA:O, and retain the same spell-learning method that the game currently offers. A true, proper remake of Planescape: Torment would be the best game ever in my opinion.
Many of the classics need to be remade, but Planescape is my #1 choice. I'd kill to have a remake of Fallout 1 and Fallout 2 done in the gameplay style seen in FO3/FONV. Then again, someone is working on it
at least, but a mod for a game the size of Fallout won't be as good as an official remake. Proper remakes of Deus Ex, Thief Gold, Thief II: The Metal Age, Temple of Elemental Evil, and both Neverwinter Nights games (especially the first one, though it would need to be expanded on as well) would all be too good to be true.

As far as KOTOR, I'd rather just have a fullblown KOTOR3
BG: Dark Alliance is a surprising mention. I'd love a proper 3D remake of Baldur's Gate 1 and 2, as well as the expansions. Jade Empire has pretty good gameplay for today's standards in my opinion (even though I'm not a big fan of them), though I could never get into the game due to its setting.
I agree with both of you about KOTOR: a remake would be nice. Although KOTOR 1 and 2 feel smooth and modern enough, the cutscenes and animations could obviously use some enhancements. KOTOR II needs a remake more than the first... it has the potential to be better than the first, but LucasArts just rushed it so much that it came out incomplete.
We definitely need KOTOR III. A remake of the first two will never happen, but there is at least a chance of KOTOR III. EA has the rights to make Star Wars games now. KOTOR needs to be a trilogy because the story is incomplete.
On that note, we need Baldur's Gate III too. Black Isle Studios was going to make BG3: The Black Hound in 3D, but they went defunct. Overhaul Games, who remastered BG1 and BG2 wants to make BG3 but I doubt it will ever happen. Edited by boredgunner - 3/6/14 at 9:16am
