If you play across three monitors in surround your resolution will be 5760 x 1080. You need 3gb vram to run it really although you can get by with 2. But you wont be able to max games.
As for necessary hardware to the sli comment,
single card would require less power so you can get a less expensive PSU solution.
Single card will not have issues with fitting in the case and keeping cool. Multi GPU solution crowd the case and reduce airflow.
These kind of things drive up your price when a single card solution or even SLI in most cases wouldnt pose a big problem. The larger ram and bus speed of the card has an effect gaming at those resolutions. With the amount your spending on this, surely you can jump upto a high end gpu. The triple 770s is not a bad solution, its just not the best, especially on a new build.
