I'm sure you can do encrypted disk images (.dmg, .sparsebundle maybe?) in Linux, but I don't know how to do it. Might be worth looking into.

I think AES 256 should be ok.

I'm quite tempted to write my own EncFS-like FUSE file system but built around standard cyphers.
