You're good adding another GTX 780 TI. Just overclocking is limited somewhat, which you said already you won't be doing.

stock power limit is 250w on each card, so you'd really have to keep everything around stock power.

hmmm I might just upgrade to the 1000w Coolermaster VANGUARD 80+ GOLD M1000W and sell the current one on ebay maybe..

v700 is a solid psu and it won't let you down on what you want out of it.

I say use the v700 for a bit first and see how it goes. Your system won't blow up or anything, just shutdown if the load is too heavy.

Really, the v700 is a beastly quality unit.
