72 is not the maximum safe temp. That's the T-case specification. Again, T-case. That's the lid. The cores can go approximately 20 degrees higher than that.

 

As for using DDR3-2133 instead of DDR3-2400 for DDR3-2400 memory because you're afraid of running into instability: are you afraid of your own shadow too?
