A standard rack is 19" wide. There are also other less common standards, but the typical stuff like Dell, HP, Supermicro, and IBM servers all follow the 19" standard. Height varies based on how many rack units the rack should hold, and depth is also varying.
I think 36" is the standard depth for a server cabinet (Dell C1100 are like 30" long, and R610s are like 31" long -- 36" leaves room for cables and breathing room).
