1.) No, and the multi-input monitors are close to perfect out of the box aside from the cranked brightness and minor green tint which can be reduced by reducing the green a bit
2.) It's pretty much the same as the 2755AMG/63AMG, but has better build quality

No, the QH2700 is a 1st class piece of trash which has two equally horrible variants sold as the same monitor.

Will the Iiyama XB2779QS have less backlight bleed (and no dead pixels) or maybe offer better reliability than the Crossovers?

No (Google Iiyama XB2779QS light bleed and you will find lots of people criticizing it), but it does have a three year warranty and can be purchased from retailers with a hassle free return and exchange policies in Europe.

How does the Crossover 2735AMG compare to the Yamakasi QH2711?

u2711 WAS the previous gen 27" Cinema displays. IIRC the u2713hm is the newer ones with a new board, thus even more latency.

I have heard good things about the u2715h so far - and it looks pretty in panel and physically and has lower latency than u2713hm.
However you need to be cautious around them, I know with the u2713hm at least there are problems with the lack of proper voltage suppression - thus some people just have their monitors go into a permanent 'sleep' mode. (Which is highly suspected from some component on the board itself being damaged from a voltage spike that wasn't suppressed).

I have simply disabled screen saver / monitor sleep. Turn off monitor manually when I go to sleep etc. and before I turn off my computer and make sure the monitor is unplugged when there are power outages as to avoid surges killing it.

All that being said, only reason I got my Dell was because it was ~$300 cheaper than the next 27" 1400p IPS panel. I would have rather gone ASUS to avoid these issues.

I have these problems with my monitors. I always wondered how to fix the issue. Permanent sleep. But, I always have had my monitors protected so not sure on the spike or if there is much of anything I can do about it.

Spike from normal usage.

I haven't had that issue with my monitors, I do not let them go into that sleep mode at all. (disabled it everywhere).
And turn it off (extra protection could be unplugging and draining of any excess power) before I turn off my computer / turn it on again / change any plugs.
