As someone playing all the games in your list the 980ti and Furys are overkill. There's only a handful of games that require that horsepower at the moment like Witcher 3, GTA V and soon to be SW: Battlefront. A lot of people are saying save money and buy a used 290. This is solid advice but I think a new 390x would be well worth it. The warranty, the VRAM and the higher chip effeciency/ binning I think justify the extra hundred bucks and it will crush all the games you mention. Plus with crossfire if the new gen of cards isn't what you hoped it would be another $350 to double your performance and exceed a Fury X performance for less money than the Fury X retail is a win-win all around.

I max out gta 5 with 390 and have solid fps. No problem at all.

If you saw my steam library you would think differently. This isn't overkill. It is just perfect for everything I need. Some rendering and gaming. But I need it for when I stream and the extra cores from the i7 and the horsepower from the 980 Ti work perfectly together to create the best experience with 1440p and 144Hz

As someone in the same boat.. I am kind of stuck on what to do as well. I already have 980 Strix under a block and am leaning more towards getting a second for 1440P/144hz I don't want to go to the hassle of selling blocks plus the card, breaking even and putting money on top for a 980ti and then having to wait a while to get the block for ti ect. ect. ect. Let me know your thoughts I will be getting my ASUS MG279Q towards the end of the month. For the price of a 980ti with no block I could get a second strix 980 and block/fittings needed and be good to go.
