Think reputation and public image. All it takes is a tiny percentage of owners breaking their iPhones trying to weigh things and the media would have a field day. It would be purposely exaggerated and misrepresented, and the average person would know the iPhone 6s and iPhone 6s Plus as "the phones that break 3x as much as Android phones". Break-gate would cost Apple millions in lost sales, as well as a bad reputation for years.

Have you already forgotten about iphone 6 bending? Yeah, you probably did considering you think Apple would care about these things.

I think if you put a crucible or some container on it it should be able to detect the change in weight pretty accurately.
