The double slit experiment has been confirmed, repeatedly. The reason why an atom stops probably lies somewhere down the rabbit hole of the Heisenberg Uncertainty Principle in that you are observing a particle or group of particles and are using its/their own energy to so thus causing its position to change, in this case stop. Pointing a camera or any other device capable of measuring the system will have the same effect.

I think we still don't know enough about the universe/nature to "actually" understand and make sense of certain measurments and actions/reactions which happen.

I think in 100-500 years people will be laughing at some of the conclusions or explanations of how certain things and systems work/behave.

Of course, you're correct. There are many aspects of the Standard Model that is just non-existent or incomplete... I've mentioned it in other threads but gravity, dark energy, dark matter and stuff like the Higgs Field all have potential interactions that are just beyond the scope of our knowledge. We'll get there some day, but until we figure out stuff like that, as well as a possible structure beyond vibrating strings... we're still primates, for the most part.
