Raid 5 would be your best bet. For 6TB you would need 3x3TB hdds, the space of one will be lost with the parity data needed in case of a disk failure. Build it and then transfer your data on it. Add another 3TB drive, eventually one of the vacated hdds for online spare : if something goes wrong rebuild process can start immediately. Your configuration will need a raid card as well. You might want to drop the gpu and slap raid card in that slot. Something like an old hp smart array p400 or lsi 87xx/88xx family. Be aware, old controllers like those don't support hdds larger than 2TB, in which case you will need 4x2TB drives to reach 6TB. Or you could just move to 4TB drives. Or you could upgrade your mobo to a Z68/z77 model on which the integrated intel controller can do raid5.
