First build. Mac user transitioning to Windows

So I finally lost hope on Apple and I am moving (back) to Windows.

Usage for this will be Lightroom, Photoshop, Excel and heavy Chrome (5-6 windows, 10+ tabs each). No gaming at all.

Budget ~$1,500 already have monitor Dell U2515H, keyboard, mouse and already have a license of win10pro.

I live in Dallas, TX so have access to a microcenter.

Want to do a moderate to medium OC since Lightroom is MHz hungry. If possible, I would like to stay away from liquid cooling.

I plan on upgrading my monitor next year to a 4k wide gamut (10bit), until then I do not believe I need a dGPU. Please consider this for the PSU sizing.

Thunderbolt port would be a nice feature since I am coming from a Mac and I have an external 4TB raid 1 drive I would like to keep using.

Questions:
1. CPU cooler, is there a better one that will allow a cooler system while overclocking? I read some issues on cooler weight, should I be concerned?
2. Case is the R5 a better fit than a Define S?
3. GPU am I OK with the HD 530 for now? I really don't want to waste money on a 960 that won't be able to drive a 4K 10-bit monitor.
4. Anything else I need? Case fans, etc?

Anything else you would do differently?

Kabylake igpu will do 5K60p
You can sell the Skylake processor when it comes out

That is a great input - haven't thought of that. Do you think it will do 10bit (wide gamut)? I haven't found specs on it.
