In medium-sized open cases such as the Define S or the Phanteks EVOLV, soft tubing can look fantastic. If you use transparent coolant and short runs with symmetrical bends, I feel it can equal the majority of hard tube builds. I also like the idea of being able to move the system around to remove/add components with less restriction.

My point is, your system looks epic, but your experience with hard tubing makes my lovey-dovey feelings towards soft tubed builds even more... potent.

If you already have the tools around for bending tubes it's really easy as long as the specs line up. However if you don't the process can become more difficult and time consuming. Soft tubing can definitely look cool and I have no problem with it and it would definitely look really cool in a small build. I like the hard angles aesthetically a little more though which is why I went that route.

Weird question but about how much would a system like this weigh?

I don't think this is a weird question. I suspect this weighs between 45-60 pounds. Next time I work on it I'll try to remember to weigh it and I'll private message you but I think my estimate is pretty accurate.
