Shouldn't surprise anyone that Windows 10 adoption rates stagnated. People tend to stick with what works, unless it's free and/or forced upon them, which are no longer the case with Windows 10. New system sales will be the bulk of Windows 10 adoption from here on out.
Eventually, Windows 10 will displace 7, but it's going to take a while.

Been a while since I did any real mining, but most of my mining rigs were running XP x64 off 4GB flash drives...no HDDs even in the systems.
Probably do have to use at least 7 now to get proper OCL support.

Outside of unstable hardware, bad configuration, or buggy drivers I haven't really noticed any difference in stability or BSOD on any NT based versions of Windows.
I'm usually highly skeptical of claims of increased stability with Windows 10 (or whatever), because every version of Windows released in the last 15+ years, once patched, should be almost perfectly stable. If someone had stability issues in Windows 2k, XP, Vista, 7, 8, 8.1, 10, or any of the server variants of these, 99% of the time it was user error.

There are systems I still use Windows 2000 and Windows 98SE on.
Microsoft support has zero bearing on when I switch operating systems. The only thing that matters is my personal preference and if what I prefer can do what I require of it.

Why does everyone always ride on Win7 nuts? Haha Windows 10 and Win 8 are easier to use and everything isn't as scattered.
I can maneuver 20 times faster in Win 10, but in Win 7 doing the same tasks feels more cumbersome.
I've been using Windows 10 for well over a year. Still prefer 7.
Been using 7 for seven years. Still prefer the 95/98 style GUI that I used in 95/98/NT 4.0/2k/XP.
Been using OSes with the Win 95/98 GUI for over two decades. Can still go back to Windows 3.x and get around fine.
